- 3 ripe bananas (mashed)
- 1/4 cup coconut oil (melted)
- 1/4 cup maple syrup or agave nectar
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup dairy-free chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mash the bananas in a large bowl, then mix in melted coconut oil, maple syrup, and vanilla extract.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Combine the wet and dry ingredients, mixing until just combined (don’t overmix!).
- Fold in the dairy-free chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean from the center.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
