Vegan Banana Chocolate Bread

Ingredients:

  • 3 ripe bananas (mashed)
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup or agave nectar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dairy-free chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the bananas in a large bowl, then mix in melted coconut oil, maple syrup, and vanilla extract.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Combine the wet and dry ingredients, mixing until just combined (don’t overmix!).
  5. Fold in the dairy-free chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean from the center.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
