Vegan Blueberry Yogurt 🫐

This creamy and refreshing Vegan Blueberry Yogurt is a perfect plant-based breakfast or snack. It’s packed with fresh blueberries, dairy-free yogurt, and just the right touch of sweetness!

Ingredients:

  • 1 cup fresh or frozen blueberries
  • 1 1/2 cups plain unsweetened coconut or almond yogurt (or any dairy-free yogurt of choice)
  • 1-2 tablespoons maple syrup or agave (adjust sweetness to taste)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional for added thickness and nutrition)
  • Fresh blueberries and granola for topping (optional)

Instructions:

  1. Cook the blueberries (optional for a richer flavor):
    • In a small saucepan, add the fresh or frozen blueberries and cook over medium heat for about 5-7 minutes until they break down and become jam-like. Stir occasionally. Remove from heat and let cool for a few minutes.
Skip this step if you prefer using fresh blueberries for a raw and lighter yogurt.
  2. Blend the yogurt:
    • In a blender, combine the dairy-free yogurt, cooked (or fresh) blueberries, maple syrup, and vanilla extract. Blend until smooth and creamy.
  3. Adjust sweetness:
    • Taste the yogurt and adjust sweetness as needed by adding more maple syrup or agave. You can also adjust the thickness by adding chia seeds if you like a thicker yogurt.
  4. Chill and serve:
    • Pour the blended yogurt into a bowl or jar and refrigerate for at least 30 minutes to allow the flavors to meld and thicken slightly.
  5. Garnish and enjoy:
    • Serve the yogurt chilled with your favorite toppings like fresh blueberries, granola, chia seeds, or coconut flakes.

Tips:

  • You can swap blueberries for other fruits like strawberries, raspberries, or mango for different variations.
  • For extra protein, add a scoop of vegan protein powder before blending.

Enjoy your creamy, fruity, and satisfying Vegan Blueberry Yogurt! 🫐🥄
